GRAMMY’S SAUSAGE/VEGGIE MEDLEY!  Are you looking for a quick and yummy dinner option for those nights when you need to get dinner on the table in a jiffy?  This is it!  This medley uses smoked sausage (I use the jalapeño kind!), baby red potatoes, and your choice of fresh veggies, all seasoned with cajun spices for a zippy party in your tummy! 🙂 haha. I use my Instant Pot when I make this recipe but my hubby just slices everything up and sautés it in a cast iron skillet on the stovetop when he makes this for us. GRAMMY'S SAUSAGE 'n VEGGIE MEDLEY

Equipment

  • 1 6 qt instant pot pressure cooker...OR...
  • 1 large skillet

Ingredients
  

  • 1 12oz link smoked sausage (andouille, cajun, or jalapeño are yummy options)
  • 1 1/2 lb baby red potatoes, halved
  • 1 1/2 lb fresh veggies (green beans, zucchini, squash, carrots, etc)
  • 3/4 cup chicken broth (OMIT IF USING SKILLET)
  • 4 tsp cajun seasoning (Slap Ya Mama, Ragin Cajun, or McCormick's are good options)
  • 3/4 tsp salt
  • 1/2 tsp black pepper
  • 4 Tbsp butter

Instructions
 

FOR INSTANT POT PRESSURE COOKER

  • Cut sausage into 1/2 inch slices; also cut potatoes in half and sliced veggies of choice to prepare for cooking. This will ensure that everything cooks evenly and close to the same timing.
  • Pour the chicken broth into your instant pot and then add the sausage, potatoes, and green beans (or veggie of choice - if using zucchini or squash, do NOT add yet).
  • Sprinkle the mixture with your cajun seasoning, salt, and pepper. Toss with a large spoon until seasonings are blended throughout.
  • Cut your butter into 4-8 pieces and toss into your pot on top.
  • Put the lid on and make sure the valve is set to "sealing". Set the Manual or Pressure cook button on for 3 minutes and cooking will begin.
  • When the 3 minutes cook time is complete, perform a "quick release" by carefully moving the valve to "venting" (be careful of steam/splattering!).
  • Once the pin has dropped, turn lid to remove. NOTE: if using zucchini or squash, now you will add those to the pot and either turn the instant pot back on for 1 minute or turn setting to "saute" and cook til tender-crisp, stirring regularly. ENJOY!

FOR SKILLET

  • Instead of chicken broth, use a small amount of olive oil in the bottom of your large skillet. Add sliced sausage and veggies, topped with seasoning, and butter slices.
  • Over medium-high heat, saute sausage/veggie medley, stirring regularly until sausage is cooked through and veggies are tender-crisp. Make sure all ingredients are sliced/cut thin so that they will cook quickly and uniformly. ENJOY!
