GRAMMY’S EGG ROLL BOWL is a new favorite in our house and wow, is it YUMMY!!  So light, healthy’ish, and loaded with flavor….it’s sure to be a favorite in your house, too!!  This recipe is a breeze to make, so quick and easy.  Plus, it’s loaded with fresh veggies and depending on if you serve it over rice or just by itself, it can be a yummy, carb-free option,too!

GRAMMY'S EGG ROLL BOWL

Ingredients
  

  • 1 tube Jimmie Dean breakfast sausage,regular or hot *Can substitute ground beef instead
  • 1 medium onion, diced
  • 16 oz bag of fresh coleslaw mix
  • 1/2 cup carrots, peeled and julienned
  • 1 crown broccoli florets, fresh and diced small
  • 2 cloves fresh garlic, minced
  • 1 tsp ground ginger
  • 1-2 Tbsp Hoison Sauce
  • 1/3 cup Low Sodium Soy Sauce

SERVE OVER:

  • 4 servings brown rice
  • 4 servings white rice
  • 4 servings chow mein

Instructions
 

  • In a large skillet over medium-high heat, brown sausage/ground beef until cooked through and crumbly.
  • Add in diced onion and cook for a couple more minutes until onion is tender.
  • Add in garlic, ginger, Hoison Sauce, Soy Sauce, ColeSlaw Mix, carrots, and broccoli to the meat mixture. Cook over medium heat for approx 5 more minutes or until veggies are tender crisp.
  • Remove from heat and serve over white or brown rice or chow mien. ENJOY!
