GRAMMY’S YUMMY CROCKPOT PORKCHOPS is an easy crockpot meal featuring scrumptious pork chops, bell peppers, and onions in a savory tomato broth that can be served over rice, noodles, or mashed potatoes!  It is yummy to the max!

This recipe evolved in our home over many years after my Hubby made an original version of this meal for me one day after work.  Back then, we both worked outside of the home and had a young child. My Hubby would get home before me, so most times he would have dinner ready when I walked in the door (hey, where did those years go? haha).  One night I walked in to the most delectable smells and he told me that he had tried a new recipe for us that night.  The original version was cooked in a skillet on the stove top but I have tweaked it for the crock pot over the years. The combination of yummy pork chops, tomatoes, bell pepper, onions, and seasonings makes for an incredibly scrumptious, yet easy-peasy, meal that is sure to become a favorite in your house, too!

GRAMMY'S YUMMY CROCKPOT PORKCHOPS

An easy crockpot meal featuring porkchops, bell peppers, and onions in a savory tomato broth to be served over rice, noodles, or mashed potatoes
Servings 4 servings

Ingredients
  

  • 4 pork chops (can be bone-in or boneless, as desired)
  • 1 can tomatoes, diced with oregano and basil
  • 1 medium onion, thinly sliced
  • 2 medium bell peppers, thinly sliced (optional)
  • 1 tsp oregano
  • 1 tsp basil
  • 1 clove garlic, minced (or equivalent of garlic powder)
  • 1 chicken bouillon cube, if desired
  • salt and pepper, to taste

Instructions
 

  • Lightly season both sides of each pork chop with salt and pepper, as desired. Set aside on a plate.
  • In bottom of crock pot/slow cooker, place sliced onions evenly. Put seasoned pork chops on top.
  • Next, pour can of diced tomatoes on top of pork chops, followed by the sliced bell peppers on top.
  • Sprinkle herbs/seasonings on top and drop in the chicken bouillon cube, if using.
  • Set crock pot/slow cooker to LOW if cooking for 8+ hours or HIGH if cooking 6-8 hrs. Cover and let cook for the day
  • When ready to serve, prepare white or brown rice, or noodles, or mashed potatoes. Serve and ENJOY! 🙂
