GRAMMY’S CALIFORNIA TACO is a huge family favorite that my Mom started making when I was growing up and now I make when the kids and grandkids come over on Sunday afternoons for Family Lunch! :). It is a yummy favorite that both young and old love!  Who doesn’t love something with Fritos in it, right?! haha. If you’ve heard of Frito Pie, this is just like that. This recipe will serve a crowd and is easy-peasy to make.  The chili-like meat mixture is loaded with FLAVOR, then is put on top of Fritos, followed with fresh veggies from lettuce, tomato, and avocado, ending with cheese, sour cream, and salsa! GRAMMY'S CALIFORNIA TACO

Ingredients
  

  • 3 lbs ground beef (or turkey)
  • 1 green bell pepper, diced
  • 2 8 oz jars taco sauce (I use Ortega-medium)
  • 2 15 oz cans Mexican Chili Beans, don't drain
  • 1 medium onion, diced
  • 2 party-size bags Fritos Original

SUGGESTED TOPPINGS

  • Shredded cheddar cheese, shredded/chopped lettuce, diced fresh tomato, diced onions, diced avocado, sour cream, salsa, etc

Instructions
 

  • In a large skillet or dutch oven, brown your ground beef and diced onion over medium-high heat until cooked through. Drain fat.
  • To the meat in pan, add your green pepper, taco sauce(s), and chili beans
  • Simmer on low on your stovetop for about 45 minutes until flavors are blended, green pepper is tender, and mixture is bubbling, stirring occasionally.
  • Remove pot from heat and prepare to serve.
  • On plate, layer corn chips first, topped with meat mixture, then shredded cheese, lettuce, tomatoes, chopped avocado, diced onion, salsa, then sour cream. Looks yummy, right?! 🙂 ENJOY!
