In a large skillet or dutch oven, brown your ground beef and diced onion over medium-high heat until cooked through. Drain fat.
To the meat in pan, add your green pepper, taco sauce(s), and chili beans
Simmer on low on your stovetop for about 45 minutes until flavors are blended, green pepper is tender, and mixture is bubbling, stirring occasionally.
Remove pot from heat and prepare to serve.
On plate, layer corn chips first, topped with meat mixture, then shredded cheese, lettuce, tomatoes, chopped avocado, diced onion, salsa, then sour cream. Looks yummy, right?! :) ENJOY!
