GRAMMY’S PUMPKIN BARS are the yummiest treats ever!! A moist, cinnamony pumpkin bar frosted in creamy cheese cream frosting…..oh my!!  It is one of my most favorite desserts ever and a family favorite, for sure!  I have made these bars for over 30 years and we never get tired of them.  And for a short cut, I use two cans of pre-made cream cheese frosting instead of homemade these days.  Check out my recipe for GRAMMY’S PUMPKIN BARS below…..they are sure to be a favorite in your house, too!  ENJOY!!

GRAMMY'S PUMPKIN BARS

Ingredients
  

  • 2 cups all-purpose flour
  • 2 tsp baking powder
  • 2 tsp cinnamon
  • 1 tsp baking soda
  • 1/4 tsp salt
  • 4 eggs
  • 1 15oz can pumpkin (I use Libby's)
  • 1 2/3 cup white sugar
  • 1 cup vegetable oil
  • 2 recipes Cream Cheese Frosting (for shortcut, I use two cans of pre-made cream cheese frosting)

Instructions
 

  • Preheat oven to 350*
  • In a medium bowl, stir together the flour, baking powder, cinnamon, baking soda, and salt. Set aside
  • In a large mixing bowl, beat together the eggs, pumpkin, sugar, and oil.
  • Addin the flour mixture and beat til well combined.
  • Spread batter in an uncreased 15x10x1 inch pan.
  • Bake at 350* for approximately 25-30 minutes or until toothpick inserted in middle comes out clean. Cool on rack in pan.
  • Frost evenly with the cream cheese frosting. Cut into squares and ENJOY!
  • MAKES 24 bars
