GRAMMY’S PUMPKIN BARS are the yummiest treats ever!! A moist, cinnamony pumpkin bar frosted in creamy cheese cream frosting…..oh my!!  It is one of my most favorite desserts ever and a family favorite, for sure!  I have made these bars for over 30 years and we never get tired of them.  And for a short cut, I use two cans of pre-made cream cheese frosting instead of homemade these days.  Check out my recipe for GRAMMY’S PUMPKIN BARS below…..they are sure to be a favorite in your house, too!  ENJOY!!

GRAMMY'S PUMPKIN BARS

Cook Time 25 minutes
Servings: 24

Ingredients
  

  • 2 cups all-purpose flour
  • 2 tsp baking powder
  • 2 tsp cinnamon
  • 1 tsp baking soda
  • 1/4 tsp salt
  • 4 eggs
  • 1 15oz can pumpkin (I use Libby's)
  • 1 2/3 cup white sugar
  • 1 cup vegetable oil
  • 2 recipes Cream Cheese Frosting (for shortcut, I use two cans of pre-made cream cheese frosting)

Method
 

  1. Preheat oven to 350*
  2. In a medium bowl, stir together the flour, baking powder, cinnamon, baking soda, and salt. Set aside
  3. In a large mixing bowl, beat together the eggs, pumpkin, sugar, and oil.
  4. Addin the flour mixture and beat til well combined.
  5. Spread batter in an uncreased 15x10x1 inch pan.
  6. Bake at 350* for approximately 25-30 minutes or until toothpick inserted in middle comes out clean. Cool on rack in pan.
  7. Frost evenly with the cream cheese frosting. Cut into squares and ENJOY!
  8. MAKES 24 bars
