GRAMMY’S CHICKEN MARGHERITA PIZZA is a long-time favorite in our house!  I created this version when our kids were teenagers at home and I was looking for a healthier, lighter option for our Family Pizza Nights.  This pizza gets it fresh flavor from the combination of cooked chicken, fresh sliced tomatoes, cheeses, and fresh herbs and seasonings!  It is quick and simple to make, especially starting with a pre-made pizza crust.  Perfect for those on-the-go nights or after a busy day. GRAMMY’S CHICKEN MARGHERITA PIZZA quickly became a favorite on the rotation back then and is still on the menu for me and my hubby’s Pizza Nights now! :). ENJOY!

GRAMMY'S CHICKEN MARGHERITA PIZZA

Servings 6

Ingredients
  

  • 1 pre-made pizza crust (I use Boboli Original)
  • 2 cups mozzarella cheese, shredded
  • 1 boneless/skinless chicken breast, cooked and diced (or use rotisserie chicken for a shortcut)
  • 4-5 plum tomatoes, thinly sliced
  • 1-2 tsp basil, chopped fresh or dried
  • 1 1/2 TBSP extra-virgin olive oil, good quality
  • 1/3 cup grated parmesan cheese
  • 1-2 clove minced fresh garlic or equiv in garlic powder

Instructions
 

  • Preheat oven to 400*
  • Spread mozzarella cheese evenly over pizza crust, then top with diced chicken.
  • On top of chicken, then placed sliced tomatoes evenly over pizza.
  • Season pizza with garlic and basil, salt and pepper to taste.
  • Drizzle the olive oil evenly on top of pizza, followed by the parmesan cheese on top.
  • Place pizza in preheated oven directly on rack in oven and cook until pizza is crisp on the bottom and cheese is melted on top....approx 15 minutes, depending on your oven. ENJOY!
