GRAMMY’S CHICKEN POPPER CASSEROLE!  Ohhhh, this casserole is good! It’s loaded is flavor and is sure to please everyone!  And if you remove the seeds from the jalapeños you will get all the yummy flavor and NO heat!  A win/win if you have kids or someone who doesn’t care for the kick from jalapeño peppers! This is easy, quick to get from prep-to-table, and is sooooo delicious!  We love it and I hope you do, too! :). Below is my GRAMMY’S CHICKEN POPPER CASSEROLE recipe…..ENJOY!

 

GRAMMY'S CHICKEN POPPER CASSEROLE

Servings 6

Ingredients
  

  • 4-5 Boneless/skinless chicken breasts, cubed
  • 1 tsp garlic powder
  • 8 oz cream cheese block
  • 1/2 cup heavy cream
  • 5 jalapeno peppers, seeded and diced
  • 2 cups grated cheddar cheese
  • 6 slices bacon, cooked and crumbled
  • 1 avocado, diced for on top

Instructions
 

  • Preheat oven to 375* and spray a 9x13 cooking dish with PAM or equivalent cooking spray.
  • Place cubed chicken breast pieces evenly in bottom of prepared pan.
  • In a medium bowl, mix together the heavy cream, cream cheese, and garlic powder until smooth. Then spread evenly over the chicken layer.
  • Sprinkle salt and pepper over the top, as desired
  • Top with diced jalapeños and then finish with the cheddar cheese evenly over the top to complete.
  • Bake for approx 45 minutes or until chicken is done. Remove from oven and sprinkle with the crumbled bacon pieces on top. I also top with fresh avocado for a splash of color and taste
  • Serve with fresh salad and Mexican Rice for a complete meal. ENJOY
