GRAMMY’S ZUCCHINI BREAD!  Ohhh, yum!  This is one of my favorite quick breads ever!  It is yummy and cinnamony and a BIG favorite in our house!  My mom used to make this when I was growing up, then I made this when our kids were growing up, and now I love to make this for our grandkids…..as I said, a family favorite! 🙂 haha. Don’t let the word “zucchini” put you off……that is what gives this bread it’s moistness! GRAMMY'S ZUCCHINI BREAD

Ingredients
  

  • 2 cups white sugar
  • 1 cup vegetable oil
  • 3 eggs
  • 1 tsp vanilla extract
  • 3 cups all-purpose flour
  • 1 tsp salt
  • 1 tsp cinnamon
  • 1/4 tsp baking powder
  • 1 tsp baking soda
  • 2 cups zucchini, peeled/grated
  • 3/4 cup chopped pecans *OPTIONAL*

Instructions
 

  • Preheat oven to 350*
  • Lightly grease/spray two loaf pans (or muffin tray or 4 mini-loaf pans) and set aside
  • In a medium mixing bowl, combine the sugar, oil, eggs, and vanilla; blend until well combined.
  • Add in flour, baking soda, baking powder, cinnamon, salt; blend until well combined.
  • Fold in grated zucchini and then add in nuts, if desired.
  • Divide batter into prepared pan(s) evenly.
  • Bake bread at 350* for 50-60 minutes for large loaves; 30-35 minutes for mini-loaves, and 25-35 minutes for muffins. Please note that all ovens are different so times may be slightly different.
  • When bread is cooked through, remove from oven and let cool in pan for 15 minutes. Then carefully remove from pan and ENJOY! 🙂
