Preheat oven to 350*
Lightly grease/spray two loaf pans (or muffin tray or 4 mini-loaf pans) and set aside
In a medium mixing bowl, combine the sugar, oil, eggs, and vanilla; blend until well combined.
Add in flour, baking soda, baking powder, cinnamon, salt; blend until well combined.
Fold in grated zucchini and then add in nuts, if desired.
Divide batter into prepared pan(s) evenly.
Bake bread at 350* for 50-60 minutes for large loaves; 30-35 minutes for mini-loaves, and 25-35 minutes for muffins. Please note that all ovens are different so times may be slightly different.
When bread is cooked through, remove from oven and let cool in pan for 15 minutes. Then carefully remove from pan and ENJOY! :)
