GRAMMY’S ZUCCHINI BREAD! Ohhh, yum! This is one of my favorite quick breads ever! It is yummy and cinnamony and a BIG favorite in our house! My mom used to make this when I was growing up, then I made this when our kids were growing up, and now I love to make this for our grandkids…..as I said, a family favorite! 🙂 haha. Don’t let the word “zucchini” put you off……that is what gives this bread it’s moistness! I promise, this will be a favorite in your house, too! GRAMMY'S ZUCCHINI BREAD
Ingredients
- 2 cups white sugar
- 1 cup vegetable oil
- 3 eggs
- 1 tsp vanilla extract
- 3 cups all-purpose flour
- 1 tsp salt
- 1 tsp cinnamon
- 1/4 tsp baking powder
- 1 tsp baking soda
- 2 cups zucchini, peeled/grated
- 3/4 cup chopped pecans *OPTIONAL*
Instructions
- Preheat oven to 350*
- Lightly grease/spray two loaf pans (or muffin tray or 4 mini-loaf pans) and set aside
- In a medium mixing bowl, combine the sugar, oil, eggs, and vanilla; blend until well combined.
- Add in flour, baking soda, baking powder, cinnamon, salt; blend until well combined.
- Fold in grated zucchini and then add in nuts, if desired.
- Divide batter into prepared pan(s) evenly.
- Bake bread at 350* for 50-60 minutes for large loaves; 30-35 minutes for mini-loaves, and 25-35 minutes for muffins. Please note that all ovens are different so times may be slightly different.
- When bread is cooked through, remove from oven and let cool in pan for 15 minutes. Then carefully remove from pan and ENJOY! 🙂
