GRAMMY’S PECAN PIE MUFFINS! These little gems are soooo amazing and addictive! You literally can’t stop at just one! They are so easy to make and are perfect for when friends come over for coffee or for brunch on a Saturday morning. Actually, they are good ANY time! My sister-in-law made these for us one weekend when we were all together about 20 years ago and we’ve been hooked ever since! My hubby is coming home from out of town on business tonight, so I thought I would whip up a quick batch for our breakfast tomorrow morning. He’s gonna love these! GRAMMY'S PECAN PIE MUFFINS
Ingredients
- 1 cup packed brown sugar
- 1/2 cup all-purpose flour
- 1 cup chopped pecans
- 2/3 cup butter, melted
- 2 eggs
Instructions
- Preheat oven to 350* and grease a mini-muffin pan. Set pan aside
- In a medium mixing bowl, combine melted butter and eggs. Mix well.
- Add in flour, brown sugar, and pecans to butter/egg mixture just until blended.
- Evenly fill your mini-muffin pan with batter, each cup about 2/3 full
- Bake at 350* for about 15-25 minutes or until muffins tested with toothpick comes out clean. Remove from pan a minute or two after removing from oven. ENJOY!
