GRAMMY’S BEST BANANA MUFFINS!  These muffins are old-fashioned yummy banana goodness in every bite! Mmm mmm mmm…they are sooo good!  They are so moist and pretty, too! This is a go-to recipe in our house and I know it will be a favorite in yours, too!

You can add pecans or walnuts to your batch…..sometimes I do and other times, I will just sprinkle the tops of the muffins with chopped pecans to make them extra pretty! :). I have a couple grandkids that don’t care for nuts, so then they can just take them off and have their muffin as they like it.  Or for a special treat, I will substitute chocolate chips for the nuts for my grandkids and ohhhhh, do they get excited! 🙂 haha  Check out my recipe for GRAMMY’S BEST BANANA MUFFINS below.  ENJOY! 🙂

GRAMMY'S BEST BANANA MUFFINS

Ingredients
  

  • 1/2 cup white sugar
  • 1/2 cup brown sugar
  • 2 eggs
  • 1 stick butter, melted
  • 2 cups flour
  • 1/2 tsp baking powder
  • 1 tsp baking soda
  • 1/4 tsp salt
  • 1/2 tsp cinnamon
  • 2 tsp vanilla
  • 3 ripe bananas, mashed
  • 1/4 cup sour ceam
  • 1/2 cup pecans or walnuts, chopped (optional) (or chocolate chips)

Instructions
 

  • Preheat oven to 400* Prepare muffin pan by greasing each slot or filling with a paper liner.
  • In a large mixing bowl, gently beat your eggs and sugars til blended
  • Add in your melted butter and vanilla til combined
  • Next, add in your flour, baking soda, baking powder, cinnamon, and salt.
  • To this mixture, add in the mashed bananas and sour cream until all ingredients are mixed well.
  • Finally, if desired, add in nuts or chocolate chips.
  • Using a scoop or a gravy ladle, fill each muffin slot 2/3 full with batter. Top each muffin with chopped nuts/chocolate chips to make them extra pretty, if desired.
  • Place in preheated oven and bake for 25-35 minutes until toothpick put in center comes out clean. Each oven is different, so baking times will differ. ENJOY!
