GRAMMY'S PECAN PIE MUFFINS

Servings: 24 mini-muffins

Ingredients
  

  • 1 cup packed brown sugar
  • 1/2 cup all-purpose flour
  • 1 cup chopped pecans
  • 2/3 cup butter, melted
  • 2 eggs

Method
 

  1. Preheat oven to 350* and grease a mini-muffin pan. Set pan aside
  2. In a medium mixing bowl, combine melted butter and eggs. Mix well.
  3. Add in flour, brown sugar, and pecans to butter/egg mixture just until blended.
  4. Evenly fill your mini-muffin pan with batter, each cup about 2/3 full
  5. Bake at 350* for about 15-25 minutes or until muffins tested with toothpick comes out clean. Remove from pan a minute or two after removing from oven. ENJOY!
