GRAMMY’S BREAKFAST BURRITOS! Yum! Are you looking for a quick, easy breakfast that can feed a busy family on a school day or guests on a Saturday morning? This yummy recipe will always be a hit! They are scrumptious scrambled eggs, O’Brien potatoes loaded with onions and peppers, savory breakfast sausage, and grated cheese all on a soft flour tortilla! My husband and I also eat this as an “Egg Scramble” without the tortilla sometimes to save the extra calories. GRAMMY'S BREAKFAST BURRITOS
Ingredients
- 9 eggs
- 1 cup Ore-Ida Potatoes O'Brien
- 1 tube Jimmy Dean Breakfast Sausage
- 1 splash milk (approx 1 - 1 1/2 Tbsp)
- 6 Flour Tortillas (I use carb-balance)
- 3/4 cup grated cheddar cheese
TOPPINGS
- salsa, pico de guillo, avocado, chopped tomato, grated cheese, sour cream, tomatillo sauce, etc
Instructions
- In a medium bowl, whisk the eggs with the milk until well blended and set aside.
- In a large skillet, on medium to medium-high heat, combine the breakfast sausage and hash brown potatoes, sautéing until the sausage is cooked through and the potatoes are tender
- Pour the the egg mixture over the sausage/potatoes in the skillet and using a spatula, stir constantly to scramble the eggs, sausage, and potatoes until the eggs are soft-scrambled.
- Remove skillet from heat and sprinkle the grated cheese on top of the eggs, lightly tossing until cheese is melted throughout.
- Now, you can either spoon mixture into a warm flour tortilla for a breakfast burrito OR you can spoon the egg mixture onto a plate for a "scramble". Top with your favorite toppings (see suggestions above) and ENJOY!
