In a medium bowl, whisk the eggs with the milk until well blended and set aside.
In a large skillet, on medium to medium-high heat, combine the breakfast sausage and hash brown potatoes, sautéing until the sausage is cooked through and the potatoes are tender
Pour the the egg mixture over the sausage/potatoes in the skillet and using a spatula, stir constantly to scramble the eggs, sausage, and potatoes until the eggs are soft-scrambled.
Remove skillet from heat and sprinkle the grated cheese on top of the eggs, lightly tossing until cheese is melted throughout.
Now, you can either spoon mixture into a warm flour tortilla for a breakfast burrito OR you can spoon the egg mixture onto a plate for a "scramble". Top with your favorite toppings (see suggestions above) and ENJOY!
