GRAMMY'S BANANA STREUSEL COFFEECAKE
Ingredients
FOR CAKE BATTER
- 2 cups all-purpose flour
- 3 tsp baking powder
- 1 tsp cinnamon
- 1 tsp salt
- 3 ripe bananas, mashed
- 1 stick butter, melted
- 2 cups white sugar
- 2 large eggs
- 1 tsp vanilla
- 1 cup milk
FOR STREUSEL LAYERS
- 2 cups all-purpose flour
- 2 cups brown sugar
- 2 sticks butter, cut into slices
Instructions
- Preheat oven to 350* and spray a 9x13 baking dish with nonstick cooking spray. Set pan aside.
MAKE BANANA CAKE BATTER
- In a medium bowl, mix together flour, baking powder, salt, and cinnamon. Set aside.
- In a large mixing bowl, mix mashed bananas and butter til well combined.
- Add in sugar, eggs, and vanilla til well blended.
- Carefully add in flour mixture and milk to batter until well combined.
NEXT, PREPARE STREUSEL
- In a medium bowl, combine flour, brown sugar, and sliced cold butter. Using a fork or pastry cutter, cut butter into flour/sugar mixture until it resembles small pebbles.
NOW, PREPARE YOUR COFFEECAKE FOR BAKING
- In prepared 9x13, pour half of the banana cake batter and spread evenly in bottom of pan.
- Sprinkle half of the streusel mixture evenly over the batter.
- Spread remaining half of batter on top of streusel layer, spreading evenly.
- Finish with remaining streusel on top layer.
- Bake at 350* for approx 50-60 minutes or until toothpick inserted in middle comes out clean.
- Serve warm or room temperature....ENJOY!
