GRAMMY'S BANANA STREUSEL COFFEECAKE

Ingredients
  

FOR CAKE BATTER
  • 2 cups all-purpose flour
  • 3 tsp baking powder
  • 1 tsp cinnamon
  • 1 tsp salt
  • 3 ripe bananas, mashed
  • 1 stick butter, melted
  • 2 cups white sugar
  • 2 large eggs
  • 1 tsp vanilla
  • 1 cup milk
FOR STREUSEL LAYERS
  • 2 cups all-purpose flour
  • 2 cups brown sugar
  • 2 sticks butter, cut into slices

Method
 

  1. Preheat oven to 350* and spray a 9x13 baking dish with nonstick cooking spray. Set pan aside.
MAKE BANANA CAKE BATTER
  1. In a medium bowl, mix together flour, baking powder, salt, and cinnamon. Set aside.
  2. In a large mixing bowl, mix mashed bananas and butter til well combined.
  3. Add in sugar, eggs, and vanilla til well blended.
  4. Carefully add in flour mixture and milk to batter until well combined.
NEXT, PREPARE STREUSEL
  1. In a medium bowl, combine flour, brown sugar, and sliced cold butter. Using a fork or pastry cutter, cut butter into flour/sugar mixture until it resembles small pebbles.
NOW, PREPARE YOUR COFFEECAKE FOR BAKING
  1. In prepared 9x13, pour half of the banana cake batter and spread evenly in bottom of pan.
  2. Sprinkle half of the streusel mixture evenly over the batter.
  3. Spread remaining half of batter on top of streusel layer, spreading evenly.
  4. Finish with remaining streusel on top layer.
  5. Bake at 350* for approx 50-60 minutes or until toothpick inserted in middle comes out clean.
  6. Serve warm or room temperature....ENJOY!
