NO-FROST CHOCOLATE OATMEAL CAKE! A chocolatey oatmeal cake filled with yummy chocolate chips and has been a family favorite in our house forever! My mom introduced us to this chocolatey goodness when I was a teenager and I have kept it going through the years with my own family. Our grown son made this his birthday tradition starting when he was only three years old! :). Even now, he will still request it when his birthday rolls around each year and he’s bumping 40! haha. It is a chocolate oatmeal cake loaded with chocolate chips in it and on top….pure chocolate heaven! :). This cake is easy-peasy to make and can go from snack cake to birthday cake to coffee cake or dessert! It will be a favorite of your family’s, too, I promise! NO-FROST CHOCOLATE OATMEAL CAKE
Ingredients
- 1 cup quick oatmeal
- 1 1/2 cups boiling water
- 1 cup white sugar
- 1 cup brown sugar
- 1 cup butter
- 1 1/2 cups flour
- 1 tsp baking soda
- 1/2 tsp salt
- 1 Tbsp cocoa powder
- 2 eggs
- 2 cups chocolate chips
Instructions
- Preheat oven to 375* and grease/flour a 13x9 baking pan
- In a large bowl, pour boiling water over the quick oats and let stand for about 10 minutes
- Add the sugars and the butter into the oatmeal and beat well.
- Add in two eggs and beat well.
- Add in flour, baking soda, and cocoa; mix well
- Stir in 1/2 cup of chocolate chips. Pour batter into prepared baking pan. Sprinkle with remaining chocolate chips on top.
- Bake at 375* for 35-40 minutes or until toothpick comes out clean. ENJOY!
