GRAMMY’S ZUCCHINI BREAD!  Ohhh, yum!  This is one of my favorite quick breads ever!  It is yummy and cinnamony and a BIG favorite in our house!  My mom used to make this when I was growing up, then I made this when our kids were growing up, and now I love to make this for our grandkids…..as I said, a family favorite! 🙂 haha. Don’t let the word “zucchini” put you off……that is what gives this bread it’s moistness! GRAMMY'S ZUCCHINI BREAD

Servings: 16 servings

Ingredients
  

  • 2 cups white sugar
  • 1 cup vegetable oil
  • 3 eggs
  • 1 tsp vanilla extract
  • 3 cups all-purpose flour
  • 1 tsp salt
  • 1 tsp cinnamon
  • 1/4 tsp baking powder
  • 1 tsp baking soda
  • 2 cups zucchini, peeled/grated
  • 3/4 cup chopped pecans *OPTIONAL*

Method
 

  1. Preheat oven to 350*
  2. Lightly grease/spray two loaf pans (or muffin tray or 4 mini-loaf pans) and set aside
  3. In a medium mixing bowl, combine the sugar, oil, eggs, and vanilla; blend until well combined.
  4. Add in flour, baking soda, baking powder, cinnamon, salt; blend until well combined.
  5. Fold in grated zucchini and then add in nuts, if desired.
  6. Divide batter into prepared pan(s) evenly.
  7. Bake bread at 350* for 50-60 minutes for large loaves; 30-35 minutes for mini-loaves, and 25-35 minutes for muffins. Please note that all ovens are different so times may be slightly different.
  8. When bread is cooked through, remove from oven and let cool in pan for 15 minutes. Then carefully remove from pan and ENJOY! 🙂
