GRAMMY’S YUMMY SALMON PATTIES!  Growing up, Salmon Patties were one of my favorite meals that my mom would make.  Crispy on the outside and soft, salmony yumminess on the inside….oh yum!  When I got married and had kids, it became a family favorite for my kids, as well.  Our son would request it for his birthday dinner every year and if you ask his wife today, he still does! haha  And now our grand kiddos love this dinner favorite, too, so we’re passing down the yumminess one generation at a time! haha. GRAMMY'S YUMMY SALMON PATTIES

Servings 3 patties

Ingredients
  

  • 1 can Wild Alaska Salmon (de-bone and de-skin)
  • 1 egg
  • 5-8 single saltine crackers, crushed finely
  • 1 Tbsp lemon juice

FOR PREPARING

  • 1 cup flour
  • salt and pepper to taste
  • 1/2 cup vegetable oil

Instructions
 

  • Drain water from can of salmon and remove bones/skin.
  • Place salmon in a medium mixing bowl and combine with the egg, saltine cracker crumbs, and lemon juice with a fork until blended.
  • Form mixture into three or four patties, depending on desired size.
  • Place oil in large skillet over medium heat. Once oil is heated, dredge salmon patties in flour and place in hot oil in skillet.
  • Season with salt and pepper to taste. Once patties are browned on one side, flip to brown on the other side in pan.
  • Once cooked through and lightly browned, remove from skillet to paper towel to drain excess oil and serve immediately! ENJOY!
