GRAMMY’S SAUSAGE ‘N PEPPERS is a yummy, quick skillet dinner of smokey sausage, fork-tender veggies, and carmelized onions over your choice of rice, grits, noodles, or mashed potatoes that is sure to be hit around your table tonight! I was in a pinch last night, needing a simple dinner option after a busy day and this skillet was the first thing that came to mind when I saw the bell peppers sitting in my crisper in the fridge. Do you ever do that, too?
I just starting slicing up our favorite jalapeño and cheese smoked sausage, the bell peppers, onion, and then saw a big ol’ carrot in the fridge and grabbed it, too! Yup, anything that caught my eye got sliced up for this yummy skillet! 🙂 haha. Then, a sprinkle of one of our favorite seasonings…Slap Ya Mama Cajun Seasoning….for a hint of heat and voila, GRAMMY’S SAUSAGE ‘N PEPPERS was ready! I served it over brown rice for a healthier option but white rice, grits, mashed potatoes, noodles, or zoodles would work great, too! The skies the limit….have fun with this and ENJOY!
GRAMMY'S SAUSAGE 'N PEPPERS
Ingredients
- 1 rope Smoked Sausage (andouille, original, jalapeño, etc), cut in 1/2" slices
- 1 medium onion, cut into slices
- 3 bell peppers (green, yellow, red, or orange), cut into slices
- 1 medium carrot, cut into thin slices
- 2 Tbsp extra virgin olive oil
- 1 tsp Slap Ya Mama Cajun Seasoning
- salt and pepper, to taste
IDEAS TO SERVE OVER
- white or brown rice
- noodles
- zoodles
- mashed potatoes
- grits
Instructions
- After slicing sausage and veggies, pour oil into skillet on stove top over medium-high heat.
- Put the sausage slices into skillet and saute for approximately 3-5 minutes, stirring constantly, until the sausage is lightly browned and cooked through. Remove sausage from pan and set aside.
- Add onion to skillet along with the assorted peppers and carrots, continuing to sauté til veggies are fork-tender.
- Sprinkle veggies with the cajun seasoning and salt and pepper to taste, continuing to saute.
- Add your sausage back into skillet with veggies, saute for an additional minute or two to blend ingredients and warm through.
- Remove from heat and serve warm over any of the ideas listed above.....ENJOY!
