GRAMMY’S OATMEAL SCOTCHIES are such a yummy, nostalgic cookie, aren’t they? YUM!  Crispy on the edges, chewy in the middle, and loaded with butterscotchy yumminess…..these little gems are a favorite in our family for years and years, for sure!

For the best results, you should use the “old fashioned” oats, which are the oats that take longer to cook on the stovetop.  But, if you’re like me and only ever have the “quick oats” (cook in one minute), don’t worry…..use those!  I always have and they always turn out great!

GRAMMY'S OATMEAL SCOTCHIES

Servings 4 dozen

Ingredients
  

  • 1 cup butter, softened
  • 1/2 cup white sugar
  • 1 1/2 cups brown sugar
  • 2 eggs
  • 2 tsp vanilla extract
  • 2 cups flour
  • 1 tsp baking soda
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1/2 tsp ground cinnamon
  • 3 cups oats (I used quick oats but can use old-fashioned for even better results)
  • 2 cups butterscotch chips

Instructions
 

  • Preheat oven to 375* and lightly grease a cookie sheet or line with parchment paper. Set pan aside
  • In a large mixing bowl, cream your butter and sugars til combined.
  • Beat in eggs and vanilla extract.
  • On low speed, mix in your flour, baking soda, baking powder, salt, and cinnamon into your batter.
  • Finally, add in your oats and butterscotch chips and mix well.
  • Drop dough by rounded tablespoon onto your prepared cookie sheet.
  • Bake at 375* for 8-10 minutes or until lightly browned.
  • Remove from oven and let cool for 1-2 minutes on cookie sheet. Remove from cookie sheet and ENJOY! 🙂
