GRAMMY’S KING RANCH CASSEROLE is a scrumptious dinner option that is loaded with flavor!!! This casserole is a favorite in our house for both young and old and always gets a BIG thumbs up from all! From the tender chunks of chicken, along with the tex-mex seasonings, to the yummy pieces of corn tortillas, this casserole is sure to please!
And the bonus? You can make this ahead of time and slip into the oven when you are ready! It can even be assembled the day before and kept in the refrigerator until you’re ready to cook the next day (adjust cooking times a little longer, if the casserole is straight out of fridge). That’s a win/win, right?! It is easy to prepare, uses common ingredients that you might already have in your pantry/fridge, and will tickle the taste buds of all that dig in, guaranteed! 😋💯

GRAMMY'S KING RANCH CASSEROLE
Ingredients
- 2 bell peppers, diced
- 1 medium onion, diced
- 2 Tbsp olive oil
- 2-4 cups cooked chicken, diced
- 1 can cream of chicken soup
- 1 can cream of mushroom soup
- 1 can Rotel diced tomatoes with green chilis
- 1 tsp chili powder
- 1/2 tsp seasoning salt
- 1 tsp cumin powder
- 1 clove garlic, minced
- 1/4 tsp black pepper
- 12 corn tortillas, torn into small pieces
- 2 cups grated cheddar cheese
Instructions
- Preheat oven to 350*. Lightly grease/spray a 9x13 baking dish. Set aside.
- In a large skillet over medium-high heat, saute bell peppers and onion until tender, about 3-4 minutes. Remove from heat.
- Add chicken, soups, tomatoes/salsa, and seasonings to the onion and bell pepper mixture. Stir until well combined.
- In prepared 9x13 baking dish, start by layering one third of the torn corn tortillas on the bottom, followed by one third of the chicken mixture, then the grated cheese. Repeat these layers two more times, ending with grated cheese on top.
- Bake in preheated oven at 350* for 30-35 minutes or until cheese is melted and casserole is bubbly. Serve immediately
