GRAMMY’S CREAMY TUSCAN PASTA is a new creation from my kitchen that quickly became a favorite in our house and will be on the rotation from now on! A creamy, parmesan sauce loaded with Italian sausage, fresh spinach, tomatoes, and garlic, then put over your favorite pasta……mmm mmmm, this dish is scrumptious pasta perfection, if I do say so myself! 🙂 haha

GRAMMY'S CREAMY TUSCAN PASTA
Ingredients
- 1 lb Italian sausage (remove casings if using links)
- 3 cloves garlic, minced
- 1 tsp Italian seasoning
- 1 1/2 tsp salt
- 1/2 tsp black pepper
- 3 cups fresh baby spinach, roughly chopped
- 3-4 Campari or Roma tomatoes, roughly chopped (can substitute sun-dried tomatoes, if desired)
- 1/2 cup chicken broth
- 1 1/2 cup heavy whipping cream
- 1/2 cup freshly grated parmesan cheese
Instructions
- In a large saucepan or skillet, over medium-high heat, brown the Italian sausage until crumbly and browned. Towards end of browning, add in the minced garlic, and lightly saute until sausage is cooked through.
- Next, sprinkle meat with remaining seasonings (Italian seasoning, salt, and pepper).
- Toss chopped spinach and tomatoes into skillet and lightly saute with meat until spinach is lightly wilted, about 1-2 minutes, stirring constantly.
- Next, pour in the chicken broth and heavy cream, along with the parmesan cheese. Stir constantly until well combined with other ingredients and the cheese is melted.
- Reduce heat and lightly simmer for about 10-15 minutes, stirring regularly
- While sauce is simmering, boil your pasta according to package instructions. When cooked to al dente, drain pasta well.
- Add pasta to meat sauce and lightly toss until well combined.
- Serve with crisp, green salad and crusty bread. ENJOY!
