GRAMMY'S CREAMY TUSCAN PASTA

A yummy pasta dish with a creamy parmesan sauce, loaded with Italian sausage, fresh spinach, tomatoes, and garlic
Servings: 6 servings

Ingredients
  

  • 1 lb Italian sausage (remove casings if using links)
  • 3 cloves garlic, minced
  • 1 tsp Italian seasoning
  • 1 1/2 tsp salt
  • 1/2 tsp black pepper
  • 3 cups fresh baby spinach, roughly chopped
  • 3-4 Campari or Roma tomatoes, roughly chopped (can substitute sun-dried tomatoes, if desired)
  • 1/2 cup chicken broth
  • 1 1/2 cup heavy whipping cream
  • 1/2 cup freshly grated parmesan cheese

Method
 

  1. In a large saucepan or skillet, over medium-high heat, brown the Italian sausage until crumbly and browned. Towards end of browning, add in the minced garlic, and lightly saute until sausage is cooked through.
  2. Next, sprinkle meat with remaining seasonings (Italian seasoning, salt, and pepper).
  3. Toss chopped spinach and tomatoes into skillet and lightly saute with meat until spinach is lightly wilted, about 1-2 minutes, stirring constantly.
  4. Next, pour in the chicken broth and heavy cream, along with the parmesan cheese. Stir constantly until well combined with other ingredients and the cheese is melted.
  5. Reduce heat and lightly simmer for about 10-15 minutes, stirring regularly
  6. While sauce is simmering, boil your pasta according to package instructions. When cooked to al dente, drain pasta well.
  7. Add pasta to meat sauce and lightly toss until well combined.
  8. Serve with crisp, green salad and crusty bread. ENJOY!
