BREAKFAST MIGAS will start your day right!! 🙂 YUM!! Last weekend, I travelled up to Ft Worth for our grand-niece’s one year birthday party at my sister, Renee’s house. It was sooo much fun to celebrate her grandbaby and spend time with her and her family. In the morning, before I was leaving for home, she made me breakfast….BREAKFAST MIGAS!! Have you ever had Migas?? If not, you are missing out!! It is a recipe that our step-mother taught us many years ago and I had forgotten all about it but my sis has been making them all these years since. They are a combination of crispy corn tortilla piece, eggs, cheese, and some kind of breakfast meat…..chorizo, sausage, or bacon, etc. Then you top this yummy concoction with a spicy tomatillo sauce (which she made from scratch https://alittlebitofgrammy.com/tomatillo-sauce/) or salsa before serving…..its a party in your tummy!! 🙂 I just had to make it this morning for my favorite guy and me, of course! haha Check out the recipe for yummy BREAKFAST MIGAS below…..ENJOY!
BREAKFAST MIGAS!! 🙂
Ingredients
- 2 fresh corn tortillas
- 3 eggs
- 2 servings breakfast meat (chorizo, bacon, sausage, etc), cooked
- 1 Tbsp bacon grease (or equiv cooking oil)
- 3/4 cup grated cheddar cheese, divided
- salsa or tormatilla sauce
- salt and pepper to taste
- avocado, tomato, add'l grated cheese
Instructions
- In a skillet, add your bacon grease/oil until melted. If you are using bacon in your Migas, you can just cook your bacon in the skillet first and then remove the bacon, leaving the grease in the skiilet.
- Tear your corn tortilla's into small piece and drop into hot skillet. Salt and pepper the tortillas as they are crispingt up, moving them around the skillet until evenly browned.
- In a small bowl, whisk your eggs until they are creamy and smooth....pour into skillet over the tortillas.
- Add in 1/2 of your cheese. Cook the eggs, tossing in the pan, until they are set.
- Add in your cooked breakfast meat of choice and toss til mixed evenly.
- Serve on plates and top with salsa/tomatillo sauce (you can also top with avocado, fresh tomato, and add'l grated cheese, as well).
