Rinse and dry tomatoes. On cutting board, slice tomatoes into 1/4-1/2 inch slices - discard the ends. Place slices on a pretty tray and top each with a mozzarella slice. Sprinkle with sea salt and coarse ground black pepper, to taste. Top with chopped fresh basil. Drizzle with a yummy olive oil - I sometimes use a garlic-infused olive oil if I have it on hand. Then drizzle with your balsamic vinegar - again, I sometimes use a flavor-infused balsamic, as well, such as garlic or pecan). With the infused choices, you can have fun and be creative! Garnish with basil sprigs on top for a pretty finish! ENJOY!
