Preheat oven to 350*. Lightly spray a 9x13 baking dish with cooking spray.
Place pork chops in prepared 9x13 and lightly salt and pepper to taste, if desired.
Scoop cream of mushroom evenly over each chop
In a small mixing bowl, combine dry stuffing mix with chicken broth until well absorbed.
Scoop stuffing mix on top of each chop evenly
Cover dish with foil and put into oven
Bake with foil for about 30-45 minutes, depending on thickness of pork chops.
Remove foil and return to oven for an additional 10-15 minutes, until stuffing is lightly browned on top.
Remove from oven and ENJOY!
