In skillet on stovetop, cook sausage until crumbled and cooked through. Toss with chopped spinach, onions, mushrooms, and 1/2 cup of the cheese. In a 9 inch pie pan (or 8x8 pan), put the sausage mixture into the bottom evenly.
In a medium bowl, combine the eggs, sour cream, milk, and seasonings. Whisk together until smooth and creamy. Pour this over the sausage mixture in your pan and sprinkle with the remaining 1/2 cup of cheese.
Bake in a preheated oven at 400* for 25-35 minutes or until middle is set and browned (oven times vary). ENJOY!
