GRAMMY’S SAUSAGE & TORTELLINI SOUP is a new favorite in our house, for sure! Yesterday, here in downtown Cleveland OH, was snowy and blustery…a perfect day for soup, right?! But I wasn’t in the mood for just anything, so I looked through my freezer and my pantry and just started cookin’! I kept tasting it as I went along and adding ingredients as my taste buds directed 🙂 haha. We ended up with this soup and it was a HUGE hit! WOW! Packed with flavor, savory sausage, cheesy tortellini, yummy veggies, and a rich, creamy broth that we dipped our garlic bread into! I thought I died and went to heaven! 🙂 My hubby was gobbling his bowl down, too! GRAMMY'S SAUSAGE & TORTILLINI SOUP
Ingredients
- 1 lb Italian sausage, mild or spicy per taste (casings removed)
- 1 medium onion, diced
- 1 1/2 cups carrots, chunky
- 3 tsp garlic, minced
- 6 cups chicken broth
- 3 cups heavy whipping cream
- 4 ounces cream cheese, cut into 4-6 cubes
- 1 14.5oz can tomatoes, petite diced
- 12 oz dry cheese tortellini
- 4 oz spinach, frozen chopped (or equiv fresh chopped)
- 1 1/2 tsp salt
- 3/4 tsp black pepper
- 1/2 tsp basil, dried
- 1/2 tsp oregano, dried
- 3 cubes chicken bouillon
Instructions
- In a large dutch oven, saute Italian sausage on medium-high heat until crumbled and cooked through. Remove from pot and set aside
- In the same pot, add your diced onion, carrots, and garlic until slightly tender and onions are translucent.
- Add your sausage back into the pot with the veggies and then add all of the remaining ingredients except for the tortellini.
- Bring soup to a light boil and add tortellini. Reduce heat and simmer until tortellini is tender and cream cheese is melted and creamy, stirring regularly to prevent sticking and scorching.
- Serve with crisp, green salad and warm, crusty bread to dip into broth. ENJOY!
