Grammy’s Quick Cinnamon CoffeeCake! This is a favorite in our house that I have been making for thirty plus years and we never get tired of it :). This can be breakfast with a cup of coffee or it can be dessert when friends come over….it is a perfect addition for any time! And it’s sooo easy, too! It starts with a yellow cake mix and instant pudding mix, then layers yummy cinnamon and pecans, to create a delicious cake that is sure to please everyone! 🙂 Check out GRAMMY’S QUICK CINNAMON COFFEECAKE below….ENJOY!
GRAMMY'S QUICK CINNAMON COFFEECAKE
Ingredients
- 1 yellow cake mix
- 1 3oz instant vanilla pudding mix (or French vanilla)
- 4 eggs
- 1/2 cup vegetable oil
- 1 cup milk
- 1 tsp vanilla
FOR TOPPING
- 1/2 cup white sugar
- 1/2 cup chopped pecans
- 1 Tbsp cinnamon
Instructions
- Preheat oven to 350* and spray a bundt pan with non-stick cooking spray. Set pan aside.
- In a small mixing bowl, combine your topping ingredients, mixing until well combined. Set aside.
- In a large mixing bowl, combine all of your cake ingredients and blend for about 4-5 minutes with an electric mixer, until smooth and well blended.
- Pour half of your batter into your prepared bundt pan, spreading evenly.
- Sprinkle half of your nut mixture evenly over the batter in pan, then spread remaining batter on top
- Sprinkle remaining nut mixture on top of final layer of batter evenly.
- Bake in 350* oven for 40-40 minutes or until toothpick inserted in middle comes out clean. Remove from oven.
- Cool in pan on rack for about 15 minutes. Then gently turn cake over on a dish to remove from pan, then turn over on a cake platter to serve.
