You can adjust the “heat” in this recipe by substituting the Rotel diced tomatoes with your favorite salsa for an extra kick, as well! Either way, it is a delicious and quick side that will go with just about everything!

GRAMMY'S TEX-MEX RICE
Ingredients
- 2 Tbsp olive oil
- 1 small onion, diced
- 2 cups long grain white rice
- 1 1/2 cups chicken broth
- 1 10 oz can Rotel tomatoes with green chilis (do not drain) OR a jar of your favorite salsa
- 1 1/2 tsp seasoning salt
- 1/2 - 1 tsp chili powder
- 1/2 - 1 tsp cumin powder
- 1 clove garlic, minced
Instructions
- Turn your Instant Pot to the "saute" function and saute your onion in the oil for a couple minutes until tender.
- Add in the rice and continue sautéing for an additional 2-3 minutes, stirring constantly.
- Add in the chicken broth, diced tomatoes (with juices), and seasonings to the rice. Stir til combined.
- Put lid on the Instant Pot and ensure that the valve is set to "sealing".
- Press the "pressure cook" button and set to three (3) minutes cook time.
- When cook time is complete, allow Instant Pot to naturally release for about 10 minutes, then do a manual release until the pin drops.
- Remove lid and fluff rice with a fork before serving. ENJOY!
